Nicoise Salad

I saw a picture of a Nicoise Salad on Flickr and it looked good so I packed my own version for lunch in the office.  I left off the olives and added feta cheese.

Here is what you need for 1 salad:

As much lettuce as  you want to eat.  My salads range from 2-3 cups
2 oz left over roasted potatoes
1/2 can can albacore tuna
a handful of lightly steamed green beans, cut into pieces
1 oz reduced fat feta cheese
a handful of grape tomatoes cut in half
1 boiled egg, sliced

Arrange the toppings however you like on top of your lettuce and serve with a vinaigrette dressing.  I used Ken’s Steakhouse Light Balsamic Vinaigrette.

Lunch for 11/4/08

Another way I like to watch my budget and my diet is to pack my lunch.  I can get more variety and tastier food then if I just ran out during my lunch hour for a burger.  I also know what I am eating and I’m not getting any (or as many) hidden calories.  

For today’s lunch I have packed a small amount of Trader Joe’s Manadarin Orange Chicken, 8 oz of brown rice, broccoli and a from-frozen eggroll with a small container of hot mustard for dipping (also from Trader Joe’s).  This comes to 9 WW points and costs about $2.
